CERBAIONE

Il Cerbaione is the result of a decision to combine our superb Sangiovese with the Merlot that we have been growing in Tuscany for more than a generation, in order to create a wine with a less pronounced varietal character but with notable depth, power and
concentration. Sangiovese is always present in a higher proportion than Merlot but the percentage in which the two grapes are blended is decided from year to year, according to the characteristics of each
vintage. The wine has a strong tannic structure and a full, smooth body. It is aged for ten months in new French oak barriques, before spending another six months in barriques that have been used once and therefore offer more gentle
tannins.

Grapes: Sangiovese, known as Brunello in Montalcino, blended with second generation Merlot in proportions that vary according to the year, but with a strong predominance of selected Sangiovese grapes. |

Method of growing: Balanced, bilateral cord |

Grapes-harvesting: Manual choice of grapes in perforated cases delicately unloaded directly into the hopper of
the stemmer. |
|
Winemaking: Separate vinification for Sangiovese and Merlot with long maceration in contact with the skins and frequent pump overs. Temperature does not exceed 33 C. |
|
Aging: 10 months in new French oak barriques followed by 6 months in barriques that have been used once.
Degree of alcohol 13,5 % vol. |

Organolectic characteristics:
Deep ruby red. Intense, fruity and well rounded with notes of mature fruit and echoes of the sweet wood in which it is aged. Remarkable structure with imposing tannins, full body and a distinctive personality. |

Method of serving: Uncork at least 4 hours before pouring to serve at a
21 °C. |
|
Gastronomical combinations:
Ideal with red meats, roasts, game and aged cheeses. |
