BRUNELLO DI MONTALCINO

This powerful wine with a strong, decided character, endowed with an austere, well-rounded fragrance, is the result of a careful selection of choice grapes in the firms best vineyards, Its renowned quality is the final product of a meticulous work done in the vineyards and subsequent interventions in the winery in total respect for the traditions and the production regulations.

Soil composition: Mixed argillaceous, rich in skeletal material

Average altitude of the vineyards: 250 meters above sea level

Grapes: Large Sangiovese grapes called a Brunello in Montalcino with the denomination cascade.

Method of growing: Balanced, bilateral cord

Grapes-harvesting: Manual choice of grapes in perforated cases delicately unloaded directly into the hopper of the stemmer.

Winemaking: Long steeping on the dregs of pressed grapes with frequent pumping over. Temperature allowed to rise freely to a maximum of 33 °C.

Aging: In young Slavonic oak, 40 hl-barrels for approximately 36 months following by refining in bottle for approximately 10 months. In vintage year of exceptional quality, part of the product is used for the Reserva, with aging in casks for at least 4 years and refining in bottle for 1 years. Degree of alcohol Approximately 13,5 % Vol.

Organolectic characteristics: Intensely deep ruby red colour with garnet nuances, limpid; austere, well-rounded fragrance with hints of the wood in which it matured well blended with the ethereal aroma; intense, complex fragrance with hints of violet, sweet-smelling violet, raspberry and pomegranate; smooth, intense, persistent but well-balanced flavor.

Method of serving: It is advisable to uncork at least 4 hours before pouring and serve at 18 °C.

Gastronomical combinations: Ideal with red meats, roasts, game and aged cheeses.
